Pineapple Ginger Rum Old-Fashioned

This is where Pineapple Ginger Bitters first proved their magic. A few droppers transform a simple rum old-fashioned into something deep, warm and unexpectedly tropical.


Ingredients

2 oz. Dark Rum

¼ oz. Demerara Syrup (or Silver Siren Simple Syrup)

3-4 droppers of Silver Siren Pineapple Ginger Bitters

Orange peel

Method

Combine Bitters, rum and syrup in glass, stir gently to mix.  Express the orange peel to release its oils, then run it along the edge of the rim.  Add a large sphere or square ice cube to drink and place the orange peel on the cube.

Siren Tip: Use a rich rum instead of a light one. Aged or dark rums hold their character better when paired with bitters and sugar, creating a more layered drink.
