Ohelo Sour

Bright, tart and unmistakably local, this sour highlights the wild flavor of ʻōhelo berries with a balance of citrus and subtle sweetness.

Ingredients
2 oz Aged Rum
¾ oz. Lemon Juice
¾ oz. Silver Siren Ohelo Berry Syrup
1 egg white (or 1 oz. Aquafaba)
2 droppers of Silver Siren Pomegranate Ginger Bitters (one for cocktail, one for garnish)
Method
Add all ingredients as listed to shaker and Dry shake (no ice) to emulsify. Add ice and shake vigorously until well-chilled, strain into a glass filled with fresh ice. Garnish with single drops of bitters intermittent on the foam.
Siren Tip: A dry shake (shaking once without ice, then again with ice) creates the silky foam that makes a sour look and feel professional. Bitters on the foam as a garnish adds complexity.
